Apulian Orecchiette with Turnip Tops: Cream and Crisp Breadcrumbs
In this version, a smooth cream coats the pasta while breadcrumbs add a crisp finish. Carone Italian extra virgin olive oil, produced at the mill in Toritto, completes the dressing.
Cook the turnip tops until tender and blend some with oil to make the cream. Keep a few leaves whole for serving. Boil the orecchiette until al dente, drain and toss with the cream; add a little cooking water if needed to loosen it. Toast the breadcrumbs in a pan and scatter them over the dish just before serving so they stay crisp. Finish with a drizzle of olive oil.
For a balanced result, taste the cream before adding the pasta and adjust the salt with the anchovies in mind. Add the toasted breadcrumbs at the very end so they stay fragrant and contrast with the soft orecchiette.
