Carone Olive Oil and Its Land
Terra degli Ulivi is based in Toritto, in the heart of the Bari basin. The company’s olive groves stretch across Toritto, Grumo Appula and Palo del Colle, at the foot of the Murgia hills. A mild climate, mineral-rich soil and Maestrale breezes shape this growing area. The company’s story began in the 1960s, when Donato Carone started the family’s farming venture. The groves include historic local varieties such as Cima di Corato, Ogliarola and Carolea. Together, these cultivars give Carone extra virgin olive oil its distinctive profile.
Sensory Profile
From Harvest to Bottling
L’estrazione avviene a freddo sotto i 27 °C.

The oil is balanced and harmonious, with vegetal notes of fresh artichoke, green tomato and newly cut grass. Its colour ranges from bright green to golden yellow. This profile is well suited to finishing dishes and everyday cooking.
From Harvest to Bottling
The olives are processed within hours of delivery to the mill. Crushing produces a smooth paste, which is then slowly mixed at a controlled temperature during malaxation. This helps tiny oil droplets combine while preserving aroma, colour and organoleptic qualities. Water, pomace and oil are then separated in a continuous-cycle system. The oil is cold-extracted below 27°C. After filtration, it is stored in insulated stainless steel tanks in climate-controlled rooms protected from light and oxygen, before bottling. Bottling follows strict hygiene and quality standards.
